Based on a real person, a young Chinese immigrant, Hoi who came to the America in the late 1800s to work on the railroads.  PIE-BITER was the nickname given to Hoi whose love for American pies became legendary. This is the story about Hoi, who grew from a skinny adolescent into a strong young man, successful in his own business. This tale is written in the folk tradition of John Henry, Paul Bunyan, and Pecos Bill and is complemented by wonderful color illustrations.
